Today’s Toss: To Your Health!

Today’s Toss:¬†Organic red and green romaine, red and green oak leaf, mizuna, baby spinach, arugula and chard. I topped it with carrots, celery, pine nuts, tomatoes, chia seeds and chives then tossed in a garlic vinaigrette.

This toss may sound a bit boring compared to some that I have made but this one has many key cold fighting ingredients to help ward off this nasty cold I am fighting. Keep in mind, it’s best to eat your veggies raw for maximum impact.

It’s All About The ABC’s
I used a variety of leafy greens which contain vitamin E. I cut up celery and carrots for some Vitamin A and beta carotene boost. I added some pine nuts and tomatoes for some additional Vitamin C. Then added a delicious garlic dressing and topped it off with some chives. Both of which contain Vitamin C, potassium and stimulate immunity. Can’t beat that with a bat!

Garlic Vinaigrette
2 parts olive oil
Squeeze lemon
Dash cider vinegar
1/4 t. Dijon Mustard
2 dashes of Worcestershire
1 clove garlic finely minced
Salt & pepper to taste

Mix and shake! Let sit over night to mellow out the garlic if you don’t want to breathe fire. If you can’t wait that long, don’t worry. You probably can’t smell anyway.

On the menu for tonight: Quinoa tossed with onions, garlic, winter squash and Dino kale for Vitamin C, E, folate and calcium. Quinoa reduces inflammation; which would be awesome if that could work on my sinuses…stat. Plus, I made homemade shocked stock the other day just in time to make a homemade soup. Ahhh, I am already on the mend I can feel it. Cold be gone, sucker. You messed with the wrong chic.
