Today’s Toss: Southwestern Salad Tossed in Creamy Avocado Lime Dressing

20130119-144159.jpg My inspiration for Today’s Toss on Pinterest. I try to stay off of it because all it does is make me hungry with all if the gorgeous food images! Today there was a beautiful, bright green avocado and cilantro salad with white beans that inspired me to make this version with organic mixed greens, shredded carrots, fresh cilantro, avocado, black beans and sweet tomatoes, tossed in a creamy avocado lime dressing. I added chia seeds for fun but that is always optional.

The dressing is super easy. Cube off two slivers of avocado, a sprinkle of kosher salt, squeeze of lime, touch of honey and some olive oil. Balance your olive oil to lime ratio to be approximately 3:1. too much lime can make it sour. The honey will balance it out id it gets too sour. Then add a few cilantro leaves (stems removed) and use your immersion blender to cream.

 

Toss and enjoy!
